Learn to make three kinds of authentic, vegan Korean kimchi with farm-fresh vegetables, and take them all home!
Jun is back! Join Junsik Kim from the Westchester Korean Seventh-Day Church for a hands-on afternoon making real, authentic Korean kimchi with vegetables grown right here at Hilltop Hanover Farm.
This isn’t a shortcut version. Jun teaches the recipes the way they’re made in Korean homes, passed down and perfected over generations, and he’ll walk you through every step, from salting and seasoning to packing your jars. Along the way, you’ll learn a little about the history and tradition behind this staple of the Korean table.
You’ll make three kinds of kimchi:
Traditional napa cabbage kimchi
Water kimchi (dongchimi), light and refreshing
Radish kimchi (kkakdugi), crunchy and bold
Everything is vegan. Every kimchi in this class is made without fish sauce or other animal products, so all are welcome at the table.
Grown at Hilltop: Your ticket includes napa cabbage, daikon radish, carrots, scallions, garlic, and ginger from our fields, plus all the seasonings and ingredients you need to make your kimchi. Just bring your own tools and jars.
What to bring:
A kitchen knife
A cutting board
An apron
Three clean quart-size jars with lids, one for each kimchi
You’ll leave with three jars of homemade kimchi, ready to ferment in your own kitchen, and the know-how to make it again.
Class size is limited to 15 so everyone gets plenty of hands-on time.
Why it matters: The Westchester Korean Seventh-Day Church is one of our food access partners, hosting weekly food distributions that help share Hilltop produce with neighbors across our community. Proceeds from this class go directly to the church to support that work.
